- 3 cups 700 ml unsweetened, canned coconut milk
- 3 tbsp 3 tbsp cocoa powder
- 1 tsp 1 tsp vanilla extract
- 1 tbsp 1 tbsp erythritol (optional)

Making low carb simple
Instructions
Instructions are for 6 servings. Please modify as needed.
Let the coconut milk sit in the fridge for 4 hours or longer to separate the cream from the coconut water.
Open the can carefully and scoop out the thick cream with a spoon and put in a bowl. Save the coconut water for a smoothie or pancakes.
Whisk the coconut cream, vanilla and optional sweetener with a hand mixer for a couple of minutes until it thickens. Add cocoa powder and whisk some more.
Serve in dessert bowls.
Tip!
If you put the mousse in the freezer it will turn to ice cream in an hour.Make sure the coconut milk doesn't have any other ingredients but coconut milk. If it does, it won't solidify inte the refrigerator as needed for this recipe.

Just made this and struggled to whisk the coconut milk smooth enough,so it's got lots of little white bits in - but also think I over whisked it as it's gone a bit grainy. Oh dear! Only the first try I guess. I've popped this batch in the freezer. Any tips for next time on how to get the consistency right? I left out the honey but perhaps should add it next time.
Also, in the picture is that just some flaked dark chocolate topping the mousse? Looks pretty and I'd like to copy whatever that is. Thanks!

Trader Joe's has coconut cream. I hadn't thought about stirring in some cocoa. This way I can make a smaller amount. Prob one can would do.

I made this without the honey, but added a frozen avocado for extra fat and nutrients. Tasted great and so easy to make :). After slipping well and truly off the wagon at the weekend, recipies like this help me get back on. I can have a dessert thats nutritious and nourish my body, while not feeling bad about it. We haven't tried this, but I believe the almond milk won't set to the same consistency as the coconut milk does in the fridge. My experience is that almond milk will stay liquid, whereas coconut milk will separate into a solid and a liquid part. It's the more solid part you need as it whips well and gives the dessert it's texture. If you try it and it works, please let us know! Good luck!12

Me, I'd just have Reddi Whip Chocolate Whipped Topping -- http://www.reddiwip.com/products/chocolate. It has zero carbs and tastes pretty good ... to me, sort of like chocolate mousse.

Ronnie, it may taste good, but look at the ingredients: Cream, Nonfat Milk, Sguar, Corn Syrup, Cocoa Powder (Processed With Alkali), Chocolate (Chocolate Liquor Processed With Alkali, Sugar, Milk Fat, Cocoa Butter, Soy Lecithin, Vanillin (An Artificial Flavor), Mono- and Diglycerides, Whey, Carrageenan, Natural and Artificial Flavors, Propellant: Nitrous Oxide.
I think we are all better off making the chocolate mousse recipe from Diet Doctor.

I just made this with a can of coconut milk as directed. I used a dark chocolate cocoa with vanilla and honey and it came out really grainy and all you could really taste was coconut and a bit of a sour taste. Just wondering if perhaps my can of coconut milk wasn't good. Thinking of trying again...has anyone else had this issue? Should it have a real coconut flavour?

Can't find coconut milk now without guar gum or coconut extract or some type of additive in the can...they put those additives in the cocunut milk so that it won't separate! I put th latest purchases (two different brands) in the fridge and neither of them would separate!
I eventually whipped up the liquid coconut milk with vanilla bean, chocolate and some xanthan gum and it became the right consistency.

I just made it, and doubt if it will be a keeper. The can of coconut mild was upright in the frig for an entire week. When I opened it, there were only bits of solid matter and everything else was liquid. I expected to see a solid plug of cream. I even put it in strainer to see if I was missing something. Nope. So I tried to use the cream by scraping it off the top, but I assume the water was incorporated. IMO the chocolate is just so bitter than even the scant bit of honey, doesn't help. Will serve with whipped cream, and see how it tastes, but it didn't taste great in liquid form, so I'm doubtful.

See AlsoGrasshopper Pie RecipeIt didn't go solid because there are additives in the coconut milk. I had the same problem as my can(s) did not separate because of the guar gum...that stops it from separating. I finally found a can that's just coconut milk as the contents.

I've made this a few times. Tonight I used coconut cream, natural unstrained greek yoghurt, and organic double cream, madagascan vanilla extract, and a touch of raw honey - fantastic!!!

I made this following the recipe using one can of Trader Joe's coconut cream. It was much too bitter so I added four 3/4 teaspoons of Truvia. It seems less bitter and perhaps it will taste fine once it has chilled. However next time I believe I will try melting stevia sweetened chocolate into the cream or try melt g some high quality chocolate that is 70% or more. There's got to be a way to have this taste fabulous and not so bitter.

Whole Foods 365 Brand has the BEST coconut milk for yielding massive amounts of coconut cream. I made a peppermint ice cream pie at Christmas time using the coconut milk, dye free candy canes and a little bit of maple syrup with peppermint extract. This recipe is really easy and you could use Swerve to sweeten.

It would be more helpful if the recipe just told us how much coconut cream to use. You don't get exactly the same amount from each can of coconut milk. Even cans of coconut cream have a liquid portion. So, it is really hard to know if the proportions are right. I've been having trouble like this with a LOT of recipes on this site. So far, I often like the recipes, but they are all poorly edited and leave room for lots of confusion.

I used Thai can coconut milk. Full fat. Two cans in the fridge. I used 3 tsp. of Swerve and 2 tsp. vanilla extract, with the 3 Tbs. Cocoa powder. It was SO YUMMY. Mine was not too thick or too thin, but I really made sure to not get any of the water. I cannot believe this is diet food... Mmmm thank you for this recipe!

I am starting this journey tomorrow and trying to find a desert to help me stay on track for the week. I have seen honey used as a sweetener, can I use monk fruit as my preferred sweetener? I normally use agave nectar but it has 15g carbs,so I want to find something else. Do not like Stevia or anything like it.

Hi everyone,
After reading the comments I was slightly dubious about this, I have only just completed two weeks of Keto. Mainly for IBS reasons, but if I lose a few lb's along the way I won't complain, =).
I was absolutely delighted with this recipe and I am currently eating a mousse for a well deserved treat. I have a really sweet tooth and have been craving this for a while. Though I rarely used to eat chocolate it was what I was looking forward to the most.
I bought a can of coconut milk (400g) from Asda (Amoy brand) and left it in the fridge overnight, I didn't use the honey and managed to make two lovely mousse glasses.
I didn't use an electric mixer, just mixed it by hand for a while, and it was perfect! Absolutely delicious, though am tempted to add the honey next time.

If you add some vanilla extract and cinnamon it cuts the bitterness down. I found I could get the same chocolate taste with less cocoa too, that also helped with the bitter taste.

You could try almond milk but we have not tested this recipe with that substitution.

The cocoa is likely to cover up the coconut taste. This cream from the coconut milk is a pretty unique ingredient, I am not sure of a good substitute.

Hi, Janice! As the recipe indicates, you will only scoop out the thick cream from the top after it separates, so you will not be using the entire amount of coconut milk.

The nutrition information is for one serving. One serving is based on 120 ml coconut cream.

The best easy choc mousse ever. wonderfully delicious. Recipe came out exactly as it said. Super for last min entertaining for a quick dessert or anytime.
Also, a recipe that doubles up as ice cream as stated, I tried popping in the freezer and yes, it is super choc icrecream.
I used 100% Cocoa Powder, even better.
